1 EGG MASALA


When you are too tired or lazy to make a curry and a side dish( veg)...this egg masala will be a best solution...you can just make egg masala and mix with some cooked rice and enjoy your meal :D.

Egg - 4
Onion - 1 medium chopped fine
Tomato - 2 medium chopped fine
Green chillies - 2 slit long
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Curry leaves - few
Hing - a pinch
Chilli powder - 1/2 tsp
Jeera/ cumin powder - 1/2 tsp
Cilantro - few leaves chopped
Salt as needed
Oil - 2 tbsp

Hard boil eggs...remove shells and cut them into half ( any way or size).
Heat oil in a pan/kadai and add mustard seeds, urad dhal, curry leaves and hing....when they start to splutter up add slit green chillies and onions... fry till onions are golden brown...next add tomatoes...mash to cook till pulpy.....and fry till the water from tomato almost dries out....then add salt and the powders( chilli and jeera powders)...and mix well...finally add chopped cilantro leaves and mix well....remove and add eggs...can use this as a side dish with any curry or gravies or as a dish for chapathis and as I mentioned can mix with some cooked rice too.
